This Week’s Posts

Cheesy Chicken Rigatoni

This delicious casserole is easy to make and quick enough for a weeknight meal. A homemade cheese sauce is made with cheese soup, evaporated milk, heavy cream, garlic, mozzarella and Parmesan cheeses. Then cooked pasta, chicken, cream of chicken soup are mixed together with the cheese sauce. Next the pasta mixture is spread into a baking dish. Mozzarella and Parmesan cheese are sprinkled on top before baking until the cheese is golden brown.

Bakery Style Chocolate Chip Toffee Cookies

These delicious cookies are a step up from traditional chocolate chip cookies. The cookie batter started with butter and brown sugar beaten together before adding eggs and vanilla. Then baking soda and flour are added to the batter. Next chocolate chips, toffee chips and chopped pecans are folded in. The batter is shaped into balls and refrigerated for a few hours. Then the cookies are baked until golden.

Bee Sting Cake

This beautiful cake is a delicious treat. Instead of traditional cake batter the cake is made with a yeast dough. The yeast dough is risen until doubled then pressed into a spring form pan. Next a mixture of sliced almonds, honey and sugar is spread on top of the dough before baking. The baked cake is sliced in half and layered with homemade custard. Once refrigerated the cake is ready to serve.

A quote, a comic and a plan

“I’m going to break one of the rules of the trade here. I’m going to tell you some of the secrets of improvisation. Just remember—it’s always a good idea to follow the directions exactly the first time you try a recipe. But from then on, you’re on your own.” – James Beard

Sometimes, you have to try a recipe to realize how to change it to your liking. I change a lot of what I cook, I look at the original recipe for inspiration, then tweak things from there. Sometimes it’s a small changes, sometimes it’s a drastic change. But I’m always willing to try a new recipe and I hope you will too!
